Marinated a few of these for an off the wall Christmas brunch. As a test, i also marinaded some typical AAA skirts from another source. Wiser Meats always shine! These skirt steaks amazingly tasty, tender and beautifully marbled. All that was leftover was the "other" skirt steak strips and broken taco shells.

I purchased these for bone broth. I like a mix of bones as it's a better flavor profile for me. I roast these and then I use my instant pot to make delicious broth.
I use those as wraps to make carnivore spring rolls, the best part is that those are the neck skins - the perfect size

I love that I can just purchase the skin! I cooked them up in the oven and they were fantastic! I am carnivore, and I don't eat chicken breast. I usually opt more for wings, bone in chicken thighs and chicken drumsticks all with the skin and for more flavor.
I discovered this cut of ribs last year and I really enjoy eating it. These tasted fantastic and I like that I can find them in bulk somewhere, but not too much bulk for 1-2 people.

I roast them and then will eat the marrow as it's a very nutritious food. I sometimes roast them and add them to my broth as well, but have found myself eating the marrow on its own more often than not lately.
