Foolproof Herb-Crusted Wild Boar Rack Recipe:

Ingredients:

  • 1 Wild Boar Rack (8 lb)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper

Instructions:

  1. Prepare the rack: Remove from the fridge 30 minutes before cooking. Pat dry and season generously with salt and pepper.

  2. Make the herb crust: Mix olive oil, garlic, rosemary, thyme, and smoked paprika into a paste. Rub it generously over the rack.
