This is fat from the back of the pig. Can be rendered into lard or added to meat dishes for enhanced flavor. You can also cure / salt to make salt pork.
I cook chunks of pork back fat in the air fryer and make it crispy. Then I drain the fat out of the bottom and use it to cook with. I will definitely purchase this again.
