Ingredients:
- 3-4 lbs Duck Bones
- 1 tbsp olive oil
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, peeled
- 2 tbsp apple cider vinegar (to extract nutrients)
- 10-12 cups water
- Fresh herbs (thyme, parsley, or bay leaves)
Instructions:
-
Roast the bones: Preheat your oven to 425°F (220°C). Spread the duck bones on a baking sheet and roast for 30 minutes, turning once, until golden brown.
-
Simmer the broth: Transfer the roasted bones to a large stockpot or slow cooker. Add vegetables, apple cider vinegar, and herbs, then cover with water. Bring to a boil, reduce heat to a simmer, and cook for 12-24 hours. Skim off any foam or fat as needed.
-
Strain and store: Strain the broth through a fine mesh sieve, discarding the solids. Let the broth cool, then store in airtight containers in the refrigerator for up to a week or freeze for longer storage.
-
Enjoy: Use your duck broth as a base for soups, stews, or sauces, or sip it warm as a nutrient-rich, comforting drink.
