I discovered this cut of ribs last year and I really enjoy eating it. These tasted fantastic and I like that I can find them in bulk somewhere, but not too much bulk for 1-2 people.

I have been using beef tendon to solidly gel up my bone broth, add more protein to my broth and to add more nutrients.
